WILD GARLIC PESTO

Another green pesto variation for shaping the popular Pesto FOODMONSTAS. Wild garlic pesto is more aromatic than classic basil pesto and naturally brings a mild garlic flavor. Perfect for green pasta monsters, snails, turtles or snakes.

INGREDIENTS

140 g wild garlic, washed and shaken dry
25 g sunflower seeds or pine nuts
250 ml extra virgin olive oil
1 tbsp Parmesan or Pecorino, finely grated
1 tsp salt, or a little less to taste
1 tsp black pepper, optional, to taste

PREPARATION

  1. Wash the wild garlic well, shake it dry and roughly chop it. Place it in a bowl.
  2. Toast the sunflower seeds briefly in a dry pan until golden, then let them cool. Roughly chop them and add them to the wild garlic. Add salt and pepper to taste.
  3. Add the olive oil and Parmesan or Pecorino. Blend briefly with an immersion blender or in a mixer until a creamy pesto forms. Blend only in short pulses so the pesto does not get warm or bitter.
  4. Spoon the pesto into a clean screw-top jar and cover the surface with a little olive oil. Seal well. It makes about one 200–220 ml jar, depending on how finely the pesto is blended.
Storage: Store in the refrigerator. Once opened, use within 3–4 days. Always keep the surface covered with a little olive oil. For longer storage, freeze in portions.
