With FOODMONSTAS WAFER EYES, the avocado elephants instantly get their typical FOODMONSTA look — whether filled with scrambled egg, built with toast ears or served as the peeled orange Elli.

INGREDIENTS

FOR THE BODY
1 ripe avocado, halved — one half for a scrambled egg version, the other for the peeled orange Elli or a second scrambled egg version
FOR THE FILLING
2 eggs
A little butter for the pan
Salt and pepper
FOR THE ELEPHANT DETAILS
2 small toast rounds or crackers (ears)
1 strip of red bell pepper (trunk)
2 cherry tomatoes, halved (feet)
2 small mozzarella slices, as eye bases
VERSION C — SCRAMBLED EGG ON A LETTUCE BASE
2–3 lettuce leaves
A few cucumber sticks
FOR THE PEELED ELLI WITH ORANGE EARS (VERSION B)
2 orange slices (ears), 1 long thin carrot strip (trunk), 2 kumquats, halved lengthwise with seeds removed (feet)

PREPARATION

  1. Halve the avocado and remove the pit. Set one half with the skin on aside for a scrambled egg version. Depending on the version you choose, either fill the second half with scrambled egg as well or carefully lift it out of the skin and use it with the rounded side facing up as a smooth elephant body.
  2. Crack the eggs into a bowl, season lightly with salt and pepper and whisk well. Melt a little butter in a small pan over low heat and cook the eggs slowly, stirring gently, until they are just set and fluffy. Remove from the heat while they are still slightly soft.
  3. For the scrambled egg versions, slightly enlarge the hollow of the avocado half with a spoon, leaving a stable green rim. Loosely spoon in the scrambled egg. Place the avocado on the plate with the skin side down and the filled opening tilted slightly forward.
  4. 🐘 VERSION A — SCRAMBLED EGG WITH TOAST EARS: Place the filled avocado half in the center of the plate. Add one small round toast slice or cracker on each side as ears. Press one end of a red bell pepper strip lightly into the scrambled egg and curve it downward onto the plate as the trunk. Place one halved cherry tomato, cut-side down, on the left and right of the body as feet. Add two small mozzarella slices to the front of the avocado and press one FOODMONSTAS WAFER EYES onto each one.
  5. 🐘 VERSION B — PEELED ELLI WITH ORANGE EARS: Carefully lift the second avocado half out of its skin and place it cut-side down on the plate, so the smooth rounded outside forms the elephant body. Add two orange slices at the sides as large ears. Place a long thin carrot strip at the front as the trunk. Add two kumquats, halved lengthwise with the seeds removed, cut-side down as feet. Add two small mozzarella slices to the front of the avocado and press one FOODMONSTAS WAFER EYES onto each one.
  6. 🐘 VERSION C — SCRAMBLED EGG ON A LETTUCE BASE: Lay 2–3 lettuce leaves flat on the plate and scatter a few cucumber sticks on top. Place the avocado half filled with scrambled egg on the lettuce. Build the ears, trunk, feet and eyes as described in Version A.
