A simple couscous and green bean salad becomes a moody FOODMONSTA plate: crispy tofu, green beans and a fried egg form a little face with its own expression. With optional FOODMONSTAS WAFER EYES, it turns into a quick Moody Monsta — savory, colorful and easy to recreate.

INGREDIENTS

FOR THE COUSCOUS
300 g couscous
500 ml vegetable broth
½ onion
1 bunch flat-leaf parsley
2 tbsp olive oil
4 tbsp vinegar
Salt and pepper
FOR THE GREEN BEANS
300 g green beans, cook for at least 10 minutes until fully done, not al dente
FOR THE CRISPY TOFU
200 g firm tofu
2 tbsp cornstarch
½ tsp salt
2 tbsp rapeseed oil or canola oil
2 tbsp soy sauce
FOR THE EGG FACE
4 eggs, 1 per serving
A little oil for frying
FOR DECORATION
Per serving: a few cooked green bean pieces, round or straight, for eyebrows, mouth and face details
Per serving: 2 tofu cubes for the look
Optional: 2 FOODMONSTAS WAFER EYES per serving, 22 mm or 35 mm

PREPARATION

  1. Trim and wash the green beans, then cut them into bite-sized pieces. Bring the vegetable broth to a boil, add the beans and cook them for at least 10 minutes until soft — do not leave them al dente here. Set aside a few nice bean pieces for decoration: round or curved pieces and straight pieces can later be broken to size and used for the face.
  2. Cut the tofu into small cubes and toss evenly with the cornstarch and salt. Heat the rapeseed or canola oil in a nonstick pan over medium-high heat and fry the tofu cubes for 5–7 minutes, turning regularly, until golden and crispy on all sides. Set aside 2 tofu cubes per serving for decoration.
  3. Add the couscous to the hot beans in the broth, remove the pot from the heat, cover and let it swell for 5 minutes. Fluff with a fork. Finely chop the onion and parsley, then mix them into the couscous with the olive oil, vinegar and soy sauce. Season well with salt and pepper.
  4. Add most of the crispy tofu to the couscous and mix everything gently. Spoon the couscous mixture onto each plate and make a shallow dip in the center — this is where the egg face will sit later.
  5. Fry one egg per person sunny-side up in a little oil until the white is set but the yolk stays round and bright — this is the central monster eye. Place the fried egg in the dip on the couscous.
  6. FOODMONSTA STEP: Use the reserved bean pieces to add eyebrows, a mouth and moody details: round or curved pieces work well as eyebrows or a surprised O-shaped mouth, while straight pieces can be broken to size and used as a mouth or zigzag detail. Place 2 tofu cubes on the egg white, one on each side of the yolk — this creates the sideways look. Optionally add FOODMONSTAS WAFER EYES to the egg white only shortly before serving. Serve immediately. Moody variations: For a surprised monster, place the tofu cubes above and below the yolk and use a round bean piece as the mouth. For a grumpy monster, place bean pieces diagonally as dark eyebrows and add short straight pieces as a zigzag mouth.
