This is the pasta ghost from the FOODMONSTAS Halloween Edition: a friendly spaghetti ghost wrapped in a soft mozzarella “robe”, with a salami tongue and two FOODMONSTAS WAFER EYES — not scary, just hungry!
Cook the spaghetti al dente in plenty of salted boiling water according to the package instructions. If you plan to warm the finished ghost under the grill or in the oven, cook the pasta 1 minute less so it stays firm. Drain, reserving a small cup of pasta water.
While the spaghetti cooks, peel and finely chop the onion. Heat a little olive oil in a small pan and gently fry the onion until soft and golden.
Stir in the tomato paste and cook for one minute, then pour in the tomato passata. Dissolve the vegetable stock powder in a splash of water and add it to the pan.
Let the sauce simmer for about 5 minutes, then season with a pinch of sugar, salt and your chosen herbs. For a smooth sauce, blend briefly with a hand blender.
Mix the drained spaghetti with the tomato sauce and a splash of the reserved pasta water until everything is glossy and well coated.
Pile the sauce-coated spaghetti into a round mound on a large microwave-safe plate, with two little “arms” sticking out at the sides — this becomes the body of your ghost.
Cut the mozzarella slices very thinly into soft, rounded robe shapes and drape them over the spaghetti, leaving a gap in the middle for the mouth. Cut one piece of salami into a tongue shape and tuck it into the gap so it peeks out. Microwave the plate for 20–40 seconds, just until the mozzarella softens and starts to melt.
FOODMONSTA STEP: Let the mozzarella cool for 1–2 minutes, until it is warm but no longer steaming hot. Press two FOODMONSTAS WAFER EYES (35 mm) onto the soft mozzarella above the mouth to bring your Spaghettini ghost to life!
No microwave available? Place the ghost on a baking tray lined with baking paper and put it briefly under a hot grill or into the oven for 1–2 minutes. Then carefully transfer it to a plate before adding the WAFER EYES.
