A simple pizza dough turns into a colorful veggie monster: bell pepper, zucchini, tomatoes, corn and cheese become a funny face with teeth, hair and a cheeky look. Add FOODMONSTAS WAFER EYES at the end, and the veggie monster looks right back from the plate.

INGREDIENTS

FOR THE DOUGH
150 g wholegrain spelt flour
350 g wheat flour, type 550 or similar
1½ tsp dry yeast
½ tsp salt
1 tbsp olive oil
400 ml lukewarm water
FOR THE TOMATO SAUCE
1 can chopped tomatoes
1 small garlic clove
1 pinch dried thyme
FOR THE TOPPING
160 g grated cheddar and mozzarella, mixed
1 red bell pepper
1 yellow bell pepper
1 zucchini
A handful of cherry tomatoes, halved
A handful of pitted olives
3–4 tbsp canned corn, drained

PREPARATION

  1. Make the dough: mix both flours in a large bowl, then stir in the yeast and salt. Make a well in the center, pour in the lukewarm water and olive oil, and mix with a wooden spoon into a soft, slightly sticky dough. Knead briefly in the bowl, then transfer to a floured surface and knead for 5 minutes until smooth. Cover with a kitchen towel and let it rest while you prepare the toppings. The resting time is not essential for a thin base, but it helps.
  2. Make the sauce: blend the chopped tomatoes with the garlic clove and a pinch of dried thyme until smooth. Season lightly.
  3. Preheat the oven to 240°C / 465°F, or 220°C / 430°F fan. Prepare all the vegetable toppings: cut the zucchini into thick slices, about 5 mm, for the eyes — use 3 slices per eye so they stay clearly visible on the large pizza. Cut the bell peppers into long strips for eyebrows and the mouth, halve the cherry tomatoes and drain the corn. For the hairy version, make zucchini hair with a julienne peeler, spiralizer or vegetable peeler. Cut the strands into short pieces and pat them very dry before adding them to the pizza.
  4. Roll the dough into a large, thin base about 35–40 cm wide. Carefully place it on a floured baking tray or pizza tray.
  5. Spread the tomato sauce evenly over the base, leaving a 2 cm border. Scatter the cheese over the whole pizza.
  6. Build the FOODMONSTA face: place 2 groups of 3 zucchini slices as large eyes on the upper half of the pizza. Use olive halves as pupils. Alternatively, after baking, place FOODMONSTAS WAFER EYES on the zucchini eyes. Add one yellow bell pepper strip above each eye group as a thick eyebrow. Place half a cherry tomato in the center as the nose. Arrange red bell pepper strips as a curved mouth — upward for a grin, downward for a grumpy monster. Fill the mouth area with corn teeth. Scatter extra olives, tomato halves or pepper pieces around the outer edge as freckles or extra monster details. For the simple version, leave the top edge clean. For the hairy version, add loose zucchini strands along the top edge.
  7. Bake for 12–15 minutes, until the edge is golden and crisp and the cheese is bubbling. If the surface browns too quickly, move the pizza to a lower rack halfway through baking.
  8. Remove from the oven and let it cool for 2 minutes before slicing. If using FOODMONSTAS WAFER EYES, add them only now. Serve immediately — the face disappears quickly!
