Classic avocado cream on toast, shaped into a friendly little dino — with cucumber back spikes, cheese feet and two FOODMONSTAS WAFER EYES in different sizes for a funny mismatched look.
Halve the avocado, remove the pit and scoop the flesh into a bowl. Mash it smooth with a fork, or leave it slightly chunky if you prefer.
Add a little lemon juice and season with salt and pepper. For extra flavor, stir in a spoonful of cream cheese or a little crushed garlic.
Toast the bread until golden, then let it cool briefly.
Spoon the avocado cream onto the toast as an oval mound, leaving a little toast visible around the edge — this becomes the dino body.
Cut a few small triangular pieces from the cucumber and place them in a row along the top of the avocado mound — these are the spikes on the dino’s back.
Cut a few small cheese cubes, or use mini mozzarella balls, and tuck them under the front and back of the mound as little feet.
FOODMONSTA STEP: Press the FOODMONSTAS WAFER EYES onto the front of the avocado mound — use one 22 mm eye and one 15 mm eye for a funny, lopsided look.
Serve immediately while everything is fresh, green and crunchy.
Tip: The avocado cream tastes best when freshly made, as it browns quickly. You can eat the toast just as it is, or turn it into a little spreading station: spread the avocado cream onto crackers or small bread pieces instead of serving it from a bowl.
